I love pie. Enough said.
Up until now, though, I've pretty much relied on others to bake for me. 2013 will be different. A different pie a week made by my own hands. That's my goal.
Luckily, I found a great (and simple) dough recipe which makes a delicious crust for pies that required pre-baked and uncooked crusts.
Now I've just got to focus on the fun part...the filling.
\o Looking forward to your adventures in pie making! If I could pass on somethings I have learned. Keep that fat(butter, I use a combo of butter and lard) cold. Freezer cold. Also buy some dried black beans and line your pie crust with parchment paper and pour the black beans in there when you blind bake the crust, helps keep the crust from "puffing" up to much. I learned how to do my crust from Alton Brown. Good luck!

Thanks for the tips Andy. I've been keeping the butter fridge cold but will try freezer cold (which will probably be best used in the summer...unless I'm able to work faster). Will also need to add beans to my next grocery list. :o)
DeleteI'm excited to be on the sidelines of your pie adventure. I'm drowning that I won't be able to get to taste the finished results at the office though. :)
ReplyDeleteThis is part of my evil plan to lure you back. :oP
DeleteMmm Pie. Will you be making both sweet & savory?
ReplyDeleteMy co-workers have requested savory...so I'll have to come up with something to keep the masses happy. :o)
